{More Natural} Cool Whip Substitute

It's no secret that I'm not a fan of processed foods. The problem is that some recipes call for convenience foods and the "real thing" is difficult to substitute.

Well.

Last week, a friend shared this recipe with me for homemade Cool Whip.  It doesn't come in the handy container, and I'm quite sure it expires quicker than the big blue tub, but give this healthier alternative a try!  And by healthier, I don't mean less fat or calories, I mean lessartery-clogging, probably cancer-causing, can't-pronounce-the-ingredients, God-never-intended-for-this-to-be-consumed garbage.

2 c. heavy cream
8 oz. sugar
1 tsp vanilla extract

Directions: Whip together with a beater (or the whisk of an electric mixer) on low until stiff peaks are formed.

Is anyone else drooling?

Living in Europe the past 12+ years has taught me Cool Whip is totally redundant and should be wiped off the face of the Earth....it's completely pointless when you can VERY easily have the real stuff, and I'm not even a big fan of whipped cream!

A few other ides/tips:
* Powdered sugar works much better than regular
* Adding in freshly grated orange or lemon zest makes a great fruit dip and/or cupcake toppings
* Whip in some fresh berries (NOT frozen) and use for layers in layer cakes rather than over-sugared frosting
* This freezes well
* It takes a lot of whipping, but be very careful when you get almost to the stage you want....it goes from perfect to 'oh crap' in no time at all. Just don't set your KitchenAide going and then walk away

Oh yeah, I forgot about the lots of whipping crossing from perfect to oh crap. It's true. I don't walk away from it. I forgot to tell you that.

Technically, lots of whipping will take it from perfect to butter. If it's already sugared though, I wouldn't recommend trying it! I'll second the powdered sugar recommendation, it does work much better. With a tablespoon or so of rum mixed in as well, it's awesome over a decadent chocolate dessert!
